Family Spice Recipe for Apple Pear Crisp

Apple Pear Crisp

A delicious twist to a fall dessert!

 

 

 

INGREDIENTS:

  • 2 lbs ripe Bosc pears (4 pears)
  • 2 lbs firm apples (6 apples)
  • 3/4 cup dried cranberries
  • 1 tsp grated orange zest
  • 1 tsp grated lemon zest
  • 2 TBS freshly squeezed orange juice
  • 2 TBS freshly squeezed lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

 

FOR THE TOPPING:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, lightly packed
  • 1/2 tsp kosher salt
  • 1 cup old-fashioned oatmeal
  • 1/2 lb (2 sticks) cold unsalted butter, diced

 

  1. Preheat oven to 350ºF.
  2. Peel and core:
    • 2 lbs ripe Bosc pears (4 pears)
    • 2 lbs firm apples (6 apples)
  3. Cut apples and pears into large chunks and put in a large bowl.
  4. Mix in with fruit:
    • 3/4 cup dried cranberries
    • 1 tsp grated orange zest
    • 1 tsp grated lemon zest
    • 2 TBS freshly squeezed orange juice
    • 2 TBS freshly squeezed lemon juice
    • 1/2 cup granulated sugar
    • 1/4 cup all-purpose flour
    • 1 tsp ground cinnamon
    • 1/2 tsp ground nutmeg
  5. Pour into a 9" x 12" baking dish.
  6. In another large bowl combine:
    • 1 1/2 cups all-purpose flour
    • 3/4 cup granulated sugar
    • 3/4 cup light brown sugar, lightly packed
    • 1/2 tsp kosher salt
    • 1 cup old-fashioned oatmeal
    • 1/2 lb (2 sticks) cold unsalted butter, diced
  7. Mix with a stand mixer using a paddle attachment on low speed for 1 to 2 minutes, or until the mixture is in large crumbles.
  8. You can also use your fingers and rub into oat mixture until coarse crumbs are formed.
  9. Sprinkle evenly over the fruit, covering the fruit completely.
  10. Place the baking dish on a parchment-lined baking sheet and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly.
  11. Serve warm or at room temperature.
