Family Spice Recipe for Grilled Balsamic Shrimp Salad

Grilled Balsamic Shrimp Salad

 

 

  1. In a medium-sized bowl whisk together:
    • 3 TBS balsamic vinegar
    • 2 TBS fresh lemon juice
    • 3 TBS olive oil
    • 1 garlic clove, crushed
    • 1/2 tsp basil, dried
    • 1/4 tsp salt
    • 1/4 tsp black pepper
  2. Add in:
    • 1 lb shrimp, peeled and deveined
  3. Coat all pieces of shrimp completely with marinade.
  4. Cover and marinate for 30 minutes and up to two hours.
  5. Start your charcoal at least 30 minutes prior to grilling.
  6. Soak wooden skewers in water at least 20 minutes prior to grilling to prevent them from burning up on the grill.
  7. Prepare vinaigrette for salad by whisking together:
    • 2 TBS balsamic vinegar
    • 1/3 cup olive oil
    • 1 garlic cloves, crushed
    • 1/2 tsp basil, dried
    • 1/2 tsp parsley, dried
    • 1/4 tsp salt
    • 1/4 tsp black pepper
  8. Slide shrimps onto wooden skewers, leaving room on each end of the skewer to handle without burning yourself.
  9. Grill shrimp kabobs for approximately 2-3 minutes per side, or until all shrimp are pink in color.
  10. Remove shrimp from grill.
  11. Serve shrimp with:
    • 1 bag of ready-to-use salad greens
    • prepared vinaigrette
