Family Spice Recipe for Grilled Beef Tenderloin

Grilled Beef Tenderloin

 

 

  1. Trim and remove all silver skin and big deposits of fat from:
    • 1 (4 lb) beef tenderloin
  2. Coat all sides of the meat with:
    • olive oil
    • kosher salt
    • ground pepper
  3. Let meat rest for 30 minutes.
  4. Preheat your grill. Set burners to medium heat.
  5. Grill the tenderloin, browning it on all sides, until it is medium rare, about 20 minutes. Using a meat thermometer internal temperature should read for medium-rare, 135º-140º F and 140º-145º F for medium.
  6. Remove the meat to a cutting board, cover it with aluminum foil, and allow it to rest for 10 minutes before slicing.
  7. Tenderloin can also be cooked in the oven: Preheat oven to 500º F. Place the meat on a roasting rack or in a roasting pan and place in oven. If you are cooking in a pan with no rack, add a splash of water to the pan. Roast the meat 10 minutes on high then reduce heat to 350º F and cook 30 minutes more. Do not open oven during those first 10 minutes. Test for doneness using a meat thermometer. Internal temperature should read for medium-rare, 135º-140º F and 140º-145º F for medium. Remove meat from oven and let rest 10 minutes before serving.
