Chicken Chili

Recipe adapted from Paula Deen.

 

 

  1. The night before you make your chili, soak in water overnight:
    • 1/2 lb dried great Northern beans
    • 1/2 lb dried kidney beans
  2. The day you make your chili, under medium-high heat, heat an 8-quart stock pot and saute:
    • 1 TBS butter
    • 1 TBS minced garlic
    • 1 large onion, chopped
    • 1 red bell pepper, chopped
    • 1 cups chopped green chiles (fresh or canned)
  3. When vegetables have softened, about 5-7 minutes, add:
    • soaked and drained Great Norhtern beans
    • soaked and drained kidney beans
    • 3 14-oz cans of chicken stock
    • 1 quart water
    • 3 cups cooked chicken, chopped
    • 1/2 cup fresh lime juice
  4. Bring to a boil over medium-high heat.
  5. Cover, reduce heat, and simmer for 1 hour.
  6. Add:
    • 1 bunch fresh cilantro leaves, chopped
    • 1 TBS ground chili powder
    • 1 tsp salt
    • 1 tsp ground cumin
  7. Bring to a boil over medium-high heat.
  8. Reduce heat, and simmer uncovered for 1 hour.
  9. Right before you serve, remove from heat and add:
    • 1 cup sour cream

INGREDIENTS:

Prep Time: 15 mins, plus soaking beans overnight

Cook Time: 2 hours 15 minutes

Servings: 10-12

Serving Size: approximately 2 cups

Serving Suggestions: Serve over rice, with salad or with some hearty bread. Garnish with sour cream, guacamole, shredded cheese, fresh lime juice, chopped fresh cilantro and/or tortilla chips.
