White Chicken Chili

INGREDIENTS:

  • 2 15-oz cans of Great Norhtern beans, drained of juices
  • 2 15-oz cans of kidney beans, drained of juices
  • 1 TBS butter
  • 1 TBS minced garlic
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 1 cups chopped green chiles (fresh or canned)
  • 3 14-oz cans of chicken stock
  • 1 quart water
  • 3 cups cooked chicken, chopped
  • 1/2 cup fresh lime juice
  • 1 cup sour cream

 

  1. In a large bowl, cover with water:
    • 2 15-oz cans of Great Norhtern beans, drained of juices
    • 2 15-oz cans of kidney beans, drained of juices
  2. Under medium-high heat, heat an 8-quart stock pot and saute:
    • 1 TBS butter
    • 1 TBS minced garlic
    • 1 large onion, chopped
    • 1 red bell pepper, chopped
    • 1 cups chopped green chiles (fresh or canned)
  3. When vegetables have softened, about 5-7 minutes, add:
    • 3 14-oz cans of chicken stock
    • 1 quart water
    • 3 cups cooked chicken, chopped
    • 1/2 cup fresh lime juice
  4. Drain beans from water and add to the chili.
  5. Bring to a boil over medium-high heat.
  6. Cover, reduce heat, and simmer for 1 hour.
  7. Add:
    • 1 bunch fresh cilantro leaves, chopped
    • 1 TBS ground chili powder
    • 1 tsp salt
    • 1 tsp ground cumin
  8. Bring to a boil over medium-high heat.
  9. Reduce heat, and simmer uncovered for 1 hour.
  10. Right before you serve, remove from heat and add:
    • 1 cup sour cream

Cook Time: 2 hours 15 min

Difficulty: Easy

Servings: 10-12

Serving Size: approximately 2 cups

Serving Suggestions: Serve over rice, with salad or with some hearty bread. Garnish with sour cream, guacamole, shredded cheese, fresh lime juice, chopped fresh cilantro and/or tortilla chips.
