Family Spice Recipe for Chicken Fajitas

Easy Chicken Fajitas

 

 

  1. Heat a large non-stick skillet and add:
    • 2 TBS olive oil
  2. Season:
    • 2 boneless chicken breasts
    • 1/2 tsp cumin
    • 1/2 tsp garlic powder
    • 1/2 tsp lemon powder
    • 1/2 tsp salt
  3. Place chicken in hot skillet and brown each side, approximately 5 minutes each side.
  4. Add to skillet:
    • 2 TBS lime juice
  5. After 2 minutes, remove chicken and place on serving plate, covered with foil.
  6. Add to skillet:
    • 1 TBS olive oil (if needed)
    • 1 small onion, sliced
    • 1 1/2 cups assorted bell peppers
  7. After vegetables start to soften, add:
    • 1 medium zuchinni, sliced in thin strips
  8. Slice partially cooked chicken into long strips and return to pan.
  9. Reduce heat to medium-low and cook an additional 5-10 minutes until chicken is cooked thoroughly.
