Homemade Chicken Noodle Soup with Lemon

Chicken noodle soup gets a makeover with tangy lemon juice and kid sized orzo noodles.

INGREDIENTS:

  • 1-2 TBS olive oil
  • 4 boneless chicken thighs (or 2 small breasts)
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp lemon pepper
  • 1/2 tsp garlic powder
  • 1/3 cup lemon juice
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • salt & pepper to taste
  • 2 TBS lime juice
  • 3 quarts of chicken stock
  • 1/2 cup of orzo

 

  1. Heat a large stock pot on medium-high and add:
    • 1 TBS olive oil
  2. Season:
    • 4 boneless chicken thighs (or 2 small breasts)
    • 1/2 tsp onion powder
    • 1/2 tsp salt
    • 1/2 tsp lemon pepper
    • 1/2 tsp garlic powder
  3. Place chicken in hot pot and brown each side, approximately 5 minutes each side.
  4. Deglaze pot with:
    • 1/3 cup lemon juice
  5. After 5 mins, remove chicken and reserve.
  6. Add to pot:
    • 1 TBS olive oil (if needed)
    • 2 cups carrots, chopped
    • 2 cups celery, chopped
    • salt & pepper to taste
    • 2 TBS lime juice
  7. Scrape bits of browned chicken into soup until vegetables start to soften, about 5 mins. and add:
  8. Cover pot, bring soup to boil and return to pot:
    • 4 boneless chicken thighs, browned & diced
    • 1/2 cup of orzo
  9. Reduce heat to medium-low and simmer for 20 minutes.
  10. Check seasoning and serve.

Serving Size: 1 1/2 - 2 cups

Serving Suggestions: Change up the soup with fun pasta shapes, rice or matzo balls. Use your favorite vegetables, too. A great add: 1/2 cup of finely chopped spinach.

 

 

 

 

 

 

 

 

 

 

 

 

Family Spice Recipe for Chicken Matzoball Soup

 

 

Here is chicken-matzoball soup. Just follow the directions on the box of your matzoball mix. Please note that matzoball dough requires approximately 20 minutes to chill in refrigerator before you can roll into balls and add to your soup.
