Classic Mashed Potatoes

A standard crowd pleaser and better than the boxed version!

 

 

 

  1. In a medium-sized pot add:
    • 3 lbs potatoes (Idaho works best, but you can use other varieties), peeled and quartered
    • 1 tsp salt
  2. Cover potatoes with water, put lid on pot and bring water to a boil over high heat.
  3. When water comes to a boil, take lid off and reduce heat to medium-low until potatoes are tender, about 20-25 mins.
  4. Drain potatoes in a colander and return the potatoes to the pot.
  5. Add to the drained potatoes:
    • 1/2 cup heavy cream or half-and-half
    • 2 TBS unsalted butter
    • 3/4 tsp salt
    • 1/4 tsp black pepper
  6. Over medium-low heat, mash the potatoes with a potato masher until well blended, about 3-4 minutes.
  7. Serve immediately.
