
Chicken Cordon Bleu Nuggets

Here's a great alternative to the boring chicken nugget for the kids! Or serve them as appetizers at your next party.
INGREDIENTS:
- 2 large eggs
- 1 cup bread crumbs
- 1 tsp dried thyme
- 1/2 cup flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 6 deli slices ham (about 5 oz)
- 6 deli slices cheddar cheese (about 5 oz)
- 1 large skinless, boneless, skinless chicken breast
- cooking spray
- Preheat the oven to 385°F.
- Spray 2 baking sheets with cooking spray.
- In a bowl, whisk:
- 2 large eggs
- splash of water
- On a plate, combine:
- 1 cup breadcrumbs
- 1 tsp dried thyme
- On another plate, combine:
- 1/2 cup flour
- 1/4 tsp salt
- 1/4 tsp pepper
- Cut each slice lengthwise into 4 long strips:
- 6 deli slices ham (about 5 oz)
- 6 deli slices cheddar cheese (about 5 oz)
- Cut into 1-inch chunks:
- 1 large skinless, boneless, skinless chicken breast
- Lay 12 ham strips on a work surface.
Top each with a cheese strip.
Place a chicken chunk toward the end of each strip and roll up to enclose the chicken.
Working with 1 chicken nugget at a time, lightly coat with the flour.
Next, dip into the egg.
Cover each egg-dipped chicken nugget with the breadcrumbs.
Transfer seam side down to the prepared baking sheets.
Generously spray the nuggets with cooking spray and bake until crisp, about 20 minutes.
If not crisping, place under broiler for 3 minutes.

Serving Suggestions: This is great for any appetizer, lunch or dinner. Change up the flavor by using swiss or mozzerella.
The key to this recipe is using long strips of ham. If your strip is too short, your nugget will not keep its shape.
