Family Spice Recipe for Gingered Rhubarb

Gingered Rhubarb

adapted from Williams-Sonoma Essentials of Roasting

 

 

 

  1. Preheat oven to 450ºF.
  2. In a medium-sized bowl combine:
    • 1 lb rhubarb, cut into 1/2-inch slices
    • 1/2 cup sugar
    • 1 TBS fresh ginger, grated
    • 1/4 cup Grand Marnier
  3. When rhubarb is evenly coated, place in a shallow baking dish just large enough to hold the rhubarb slices in a single or double layer.
  4. Roast the rhubarb, stirring 2-3 times, until it is very soft, but still retaining its shape, about 20-25 mins.
  5. Remove the dish from the oven and let the rhubarb cool to room temperature.
  6. Serve over vanilla ice cream or over shortcake biscuits garnished with whipped cream.
