Grilled Tequila-Lime Grilled Chicken Tacos

INGREDIENTS:

  • 1/4 cup olive oil
  • 3/4 cup fresh lime juice
  • 1 jalapeño chili, seeded and minced
  • 1/2 cup tequila
  • 3 TBS Triple Sec
  • 1/4 cup fresh cilantro
  • 1 small onion, quartered
  • 2 garlic cloves

 

  1. Rinse and pat dry:
    • 6 skinless and boneless chicken breast halves
  2. In a blender add:
    • 1/4 cup olive oil
    • 3/4 cup fresh lime juice
    • 1 jalapeño chili, seeded and minced
    • 1/2 cup tequila
    • 3 TBS Triple Sec
    • 1/4 cup fresh cilantro
    • 1 small onion, quartered
    • 2 garlic cloves
  3. Purée marinade until smooth.
  4. Place chicken in a non-reactive container and pour marinade over it, coating it thoroughly.
  5. Cover and refrigerate for 4-6 hours, turning the chicken several times.
  6. Remove chicken from the refrigerator 30 minutes prior to cooking.
  7. Heat grill with all burners on high for 10 minutes, with lid closed.
  8. Scrape and oil cooking grate.
  9. Place chicken on grill and grill until browned all over, about 5 minutes per side.
  10. Continue grilling chicken covered until meat thermometer internal temperature reads 180º, about 10 minutes.
  11. Transfer chicken to cutting board, tent with foil, and let rest 10 minutes.
  12. Cut chicken into strips or smaller chunks.
  13. Serve over salad or with flour/corn tortillas.

You can also use this marinade for bone-in chicken thighs, legs and breasts. Cooking time will take longer, approximately 30 minutes.
