Honey-Balsamic Lamb Chops

INGREDIENTS:

  • 8 small lamb chops
  • 1/3 cup balsamic vinegar
  • 1 garlic clove
  • 2 TBS honey
  • 3/4 cup vegetable or canola oil
  • Kosher salt and freshly ground black pepper
  • 2 TBS olive oil
  • 1/2 TBS chopped fresh rosemary leaves

 

  1. Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  2. Remove from refrigerator and bring to room temperature:
    • 8 small lamb chops
  3. In the bowl of a food processor, pulse until blended:
    • 1/3 cup balsamic vinegar
    • 1 garlic clove
    • 2 TBS honey
  4. With the machine running, slowly pour in and mix until smooth:
    • 3/4 cup vegetable or canola oil
  5. Season sauce with:
    • Kosher salt and freshly ground black pepper
  6. Season lamb with:
    • Kosher salt and freshly ground black pepper
  7. Drizzle lamb chops with:
    • 2 TBS olive oil
    • 1/2 TBS chopped fresh rosemary leaves
  8. Grill the lamb chops for 2 to 3 minutes each side until medium-rare.
  9. Arrange the lamb chops on a platter.
  10. Spoon the sauce over the top or serve the sauce on the side.
