Indonesian Ginger Chicken

INGREDIENTS:

  • 1 cup honey
  • 3/4 cup soy sauce
  • 1/4 cup minced garlic (8 to 12 cloves)
  • 1/2 cup peeled and grated fresh ginger root
  • 2 (3 1/2 lbs) chickens, quartered, with backs removed

 

  1. About 30 minutes before roasting, remove from the refrigerator:
    • 2 (3 1/2 lbs) chickens, quartered, with backs removed
  2. If the giblets and neck are in the chicken cavity, remove them and reserve the giblets.
  3. Wash chickens and pat dry with paper towels.
  4. In a small saucepan over medium heat whisk together:
    • 1 cup honey
    • 3/4 cup soy sauce
    • 1/4 cup minced garlic (8 to 12 cloves)
    • 1/2 cup peeled and grated fresh ginger root
  5. Cook until honey is melted, then remove from heat and let cool for 10 minutes.
  6. Arrange the chicken in 1 layer in a shallow baking pan, skin side down, and pour on the sauce.
  7. Cover the pan tightly with aluminum foil.
  8. Marinate overnight in the refrigerator.
  9. Preheat oven to 350º.
  10. Place the baking pan in the oven and bake for 30 minutes.
  11. Uncover the pan, turn the chicken skin side up, and raise the temperature to 375ºF.
  12. Continue baking for 30 minutes or until the juices run clear when you cut between a leg and thigh and the sauce is a rich, dark brown.
