Lemon-Rosemary Chicken

INGREDIENTS:

  • 6 chicken thighs
  • 6 drumsticks
  • zest from 1 lemon
  • 1/4 cup lemon juice
  • 1/4 cup fresh rosemary
  • 1 small onion, sliced thinly
  • 2 tsp garlic, crushed
  • 1/2 tsp salt
  • 1/2 tsp pepper

 

  1. Combine in a bowl and marinate 2-6 hours:
    • 6 chicken thighs
    • 6 drumsticks
    • zest from 1 lemon
    • 1/4 cup lemon juice
    • 1/4 cup fresh rosemary
    • 1 small onion, sliced thinly
    • 2 tsp garlic, crushed
    • 1/2 tsp salt
    • 1/2 tsp pepper
  2. Preheat oven to 400ºF.
  3. Place chicken with marinade on roasting pan.
  4. Roast chicken on bottom rack of oven at for 20 minutes.
  5. Bring chicken to top rack of oven and broil at 500ºF until well browned, about 20 minutes.
  6. Remove chicken from oven and place in serving platter. Cover with foil.
  7. Pour juice into a small saucepan and reduce to 1/3, about 10 minutes.
  8. Pour sauce through a fat separator to skim extra fat.
  9. Pour skimmed sauce over chicken and serve.

Serving Size: 1 thigh and 1 drumstick
