Family Spice Recipe for Classic Marinara

 

Basic Marinara Sauce

Here are two great recipes using canned tomatoes, as delicious tomatoes are not always available at your grocery store.It also convenient and cost effective.

 

  1. Heat a large dutch oven on medium-high and add:
    • 2 TBS olive oil
    • 2 large onions, finely chopped
  2. Cook until onions soften, approximately 7 minutes.
  3. Add to the onions:
    • 8 garlic cloves, crushed
    • 4 TBS dried basil
    • 2 TBS dried parsley
  4. Mix until evenly distributed and cook 2 minutes.
  5. Stir in:
    • 1 6lb 6oz can diced tomatoes
  6. After 5 minutes stir in:
    • 1 cup red wine
    • 2 6oz cans tomato paste
  7. Bring to boil, then reduce to simmer uncovered at low heat for 1 hour. The longer the marinara simmers, the thicker the sauce and the more flavor it will have.

INGREDIENTS:

  • 1 6lb 6oz can diced tomatoes
  • 2 large onions
  • 8 garlic cloves
  • 2 TBS olive oil
  • 4 TBS dried basil
  • 2 TBS dried parsley
  • 1 cup red wine
  • 2 6oz cans tomato paste
  • salt & pepper to taste

 

 

 

 

Family Spice Recipe for Classic Marinara

Prep Time: 10 mins

Cook Time: 1 hour 15 mins

Yield:4 1/2 quarts (18 cups) of marinara

Servings: per quart, serves 4 over a pound of pasta as a main course.

Serving Suggestions: Kids picky about tomato chunks? Get your hand blender out and puree the sauce. Great for pizza, meatballs or spaghetti bolognese (meat sauce). Use what you need and freeze the rest for next time!

Marinara Sauce 2

This recipes uses the classic combination of onions, celery and carrots as the base to the tomato sauce. Recipe from Giada De Laurentis, Everyday Italian: 125 Simple and Delicious Recipes

 

  1. Heat a large dutch oven on medium-high and add:
    • 1/2 cup olive oil
    • 2 smal onions, finely chopped
  2. Cook until onions are translucent, approximately 10 minutes.
  3. Add to the onions:
    • 2 celery stalks, finely chopped
    • 2 medium carrots, peeled and finely chopped
    • 2 garlic cloves, finely chopped
    • 1/2 tsp salt
    • 1/2 tsp ground pepper
  4. Sauté until all the vegetables are soft, approximately 10 minutes.
  5. Stir in:
    • 2 32oz cans crushed tomatoes
    • 2 dried bay leaves
  6. After 5 minutes stir in:
    • 1 cup red wine
    • 2 6oz cans tomato paste
  7. Simmer uncovered at low heat until sauce thickens, approximately 1 hour.
  8. Remove and discard the bay leaves.
  9. Season the sauce with more and pepper to taste.
