Mini Mushroom Pizzas

Here is an easy appetizer that gives you a healthy bite of pizza you can pop in your mouth. The unhealthy pizza crust is replaced with delicious and nutritious mushroom caps.

 

 

 

  1. Preheat oven to 350ºF.
  2. Using a damp paper towel gently clean:
    • 8 large stuffing mushrooms, stems removed
  3. In a small bowl combine:
    • 2 TBS parmesan cheese, grated
    • 1/2 cup bottled or homemade Marinara Sauce
  4. Place 1 tablespoon of sauce mixture inside each mushroom cap
  5. Place mushrooms on broiler pan prepared with non-stick spray and top mushrooms with:
    • 1/2 cup mozzarella cheese, shredded
    • 8 slices of pepperoni
  6. Bake until cheese is brown and bubbly, about 25-30 minutes
