
Mini Mushroom Pizzas
Here is an easy appetizer that gives you a healthy bite of pizza you can pop in your mouth. The unhealthy pizza crust is replaced with delicious and nutritious mushroom caps.

INGREDIENTS:
- 8 large stuffing mushrooms, stems removed
- 2 TBS parmesan cheese, grated
- 1/2 cup bottled or homemade Marinara Sauce
- 1/2 cup mozzarella cheese, shredded
- 8 slices of pepperoni
- Preheat oven to 350ºF.
- Using a damp paper towel gently clean:
- 8 large stuffing mushrooms, stems removed
- In a small bowl combine:
- 2 TBS parmesan cheese, grated
- 1/2 cup bottled or homemade Marinara Sauce
- Place 1 tablespoon of sauce mixture inside each mushroom cap
- Pour mushrooms on broiler pan prepared with non-stick spray and top mushrooms with:
- 1/2 cup mozzarella cheese, shredded
- 8 slices of pepperoni
- Bake until cheese is brown and bubbly, about 25-30 minutes
