
One-Pan Spaghetti

INGREDIENTS:
- 1 TBS olive oil
- 1/4 cup onion
- 1 lb ground turkey
- 1 TBS basil
- 1 tsp garlic, crushed
- 1 tsp salt
- 2 14.5 oz cans diced tomatoes** (or 2 1/2 cups of bottled or homemade Marinara Sauce)
- 2 cups water
- 8 oz spaghetti
- 1/4 cup heavy cream
- 1/2 cup parmesean, grated
- 1/2 cup mozzerella, shredded
- Preheat broiler to 500ºF and adjust rack to upper-middle position.
- In an oven-safe large non-stick skillet, over medium-high heat add:
- 1 TBS olive oil
- 1/4 cup onion, chopped
- 1 lb ground turkey*
- Break up meat and as it cooks, season with:
- 1 TBS basil
- 1 tsp garlic, crushed
- 1/2 tsp salt
- Stir in:
- 2 14.5 oz cans diced tomatoes** (or 2 1/2 cups of bottled or homemade Marinara Sauce)
- 2 cups water
- 1/2 tsp salt
- Stir in:
- Stir often until spaghetti starts to soften, about 7 minutes.
- Reduce heat to medium-low, cover skillet and simmer for another 7 minutes.
- Turn off heat and stir in:
- 1/4 cup heavy cream
- 1/4 cup parmesean, grated
- 1/4 cup mozzerella, shredded
- Sprinkle top with:
- 1/4 cup parmesean, grated
- 1/4 cup mozzerella, shredded
- Place skillet in the broiler until the top browns, about 3 minutes.
- Let spaghetti cool for 5 minutes and serve.

Other options:
* Any 1 lb meat combination is great, even mix with italian sausage.
** If your picky eater doesn't like tomato chunks, use your hand blender and puree your tomatoes until smooth. Then add to the pan (step 3).
*** Hold your spaghetti over the pan (high enough to not burn yourself) and break the spaghetti in half and then in quarters, approx. 2 in. pieces. You can also use 8 oz. of any other pasta (elbow macaroni, penne, rigatoni).
