Family Spice Recipe for Peach Crisp

Peach Crisp

A delicious summer dessert to prepare when peaches are at their peak.

 

 

 

INGREDIENTS:

  • 1 cup rolled oats, old fashioned
  • 1/2 cup all-purpose flour
  • 1/2 cup sliced almonds
  • 1/2 cup brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/8 tsp salt
  • 1/3 cup cold butter, cut into chunks
  • 6 cups sliced peaches (approx. 6-7 large peaches)
  • 2 TBS lemon juice
  • 1/2 cup sugar
  • zest from one lemon
  • 2 TBS cornstarch or tapioca

 

  1. Preheat oven to 350ºF.
  2. In a large bowl mix together:
    • 1 cup rolled oats, old fashioned
    • 1/2 cup all-purpose flour
    • 1/2 cup sliced almonds
    • 1/2 cup brown sugar, packed
    • 1/2 tsp ground cinnamon
    • 1/2 tsp ground ginger
    • 1/8 tsp salt
  3. With your fingers rub into oat mixture until coarse crumbs form:
    • 1/3 cup cold butter, cut into chunks
  4. Cover and chill in the refrigerator.
  5. In another large bowl gently mix to coat:
    • 6 cups sliced peaches (approx. 6-7 large peaches)
    • 2 TBS lemon juice
    • 1/2 cup sugar
    • zest from one lemon
    • 2 TBS cornstarch or tapioca
  6. Pour into a shallow 2-3 quart baking dish and sprinkle evenly with topping.
  7. Bake for 45 minutes or until toping is golden brown and fruit is bubbling.
  8. Serve warm or at room temperature.
