
Peach Crumb Bars
Craving peach pie but don't want the fuss? This treat will definitely satisfy any peach craving!

INGREDIENTS:
FOR THE DOUGH:
- 3 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup (2 sticks) unsalted butter, cold
- 1 egg, lightly beaten
FOR THE FILLING:
- 5 cups diced peaches (about 7 peaches)
- 2 TBS lemon juice
- ½ cup all-purpose flour
- 1 cup granulated sugar
- ¼ tsp salt
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- Preheat oven to 375ºF.
- Grease a 9" x 13" baking pan.
- In a medium bowl whisk together:
- 3 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ¼ tsp salt
- Using a pastry blender to cut in:
- 1 cup (2 sticks) unsalted butter, cold
- Mix in:
- The dough will be crumbly. Press half of the dough into the prepared pan.
- Place the pan and the remainder of the dough in the refrigerator while you prepare the filling.
- In a large bowl, gently mix together:
- 5 cups diced peaches (about 7 peaches)
- 2 TBS lemon juice
- In a separate bowl, whisk together:
- ½ cup all-purpose flour
- 1 cup granulated sugar
- ¼ tsp salt
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- Pour flour mixture over the peaches and mix gently.
- Spread the peach mixture evenly over the refrigerated crust.
- Crumble the remaining dough over the peach layer.
- Bake in the preheated oven for 45 minutes, or until the top is slightly brown.
- Cool completely before cutting into squares.
