Family Spice Recipe for Peach-Pretzel Tart

No-Bake Peach-Pretzel Tart

INGREDIENTS:

  • 1 box instant vanilla pudding
  • 1/4 cup low sugar strawberry preserves
  • 1 tsp lemon juice
  • 1 tsp brandy or fruit juice
  • 1/4 cup semi-sweet chocolate chips
  • 1/2 cup butter
  • 1 cup pretzels
  • 2 ripe peaches

 

  1. Prepare as directed on package:
    • 1 box instant vanilla pudding
  2. Put bowl of pudding in refrigerator to chill.
  3. In a small non-stick saucepan melt:
    • 1/4 cup low sugar strawberry preserves
    • 1 tsp lemon juice
    • 1 tsp brandy (or any fruit juice)
  4. Set jam mixture aside to cool.
  5. In a small non-stick saucepan melt on low heat and stirring often:
    • 1/4 cup chocolate chips
    • 1/2 cup butter
  6. In a blender, crush approximately:
    • 1 cup of pretzels
  7. After melting the chocolate and butter, turn heat off and add:
    • 1/2 cup of crushed pretzels
  8. Using a spoon or your fingers, press chocolate-pretzel mixture into 5" x 14" tart pan.
  9. Remove pudding from refrigerator and mix again. Pour into chocolate-pretzel shell:
    • 1/2 cup prepared pudding
  10. Place over the pudding in a decorative manner:
    • 2 ripe peaches, thinly sliced
  11. Spoon over peaches:
    • strawberry preserve mixture
  12. Chill for 2 hours until ready to serve.

Serving Size: Yields 1 5"x14" Tart

Serving Suggestions: Use any fruit in season (strawberries, kiwi, etc..) and pair it with any jam you have in stock (apricot, orange, grape). You can also switch out the crushed pretzels with crushed graham crackers, crushed vanilla wafers, crushed cereal - be creative! Family Spice Recipe for Pudding Pops

What to do with leftover pudding? Pour into small 3 oz. paper cups, stick a popsicle stick in it and freeze! Popsicles will be ready in 4 hours. If you're not going to eat them within 24 hours, put popsicles in a plastic freezer bag. You can also do this with leftover smoothies.
