Family Spice Recipe for Roasted Acorn Squash

Roasted Acorn Squash

 

 

  1. Preheat oven to 400º.
  2. In a large bowl combine:
    • 2 small acorn squashes, quartered and seeded
    • 1 tsp coarse salt
    • 2 TBS extra-virgin olive oil
  3. Put vegetables on a large roasting pan and place in oven.
  4. Roast in the oven, until squash pieces are golden and crispy on the edges, tender and cooked through on the inside, about 40 minutes.
