Fettucini with Shrimp and Roasted Vegetables

INGREDIENTS:

  • 1 Italian eggplant
  • 1 zuchinni
  • 5 roma tomatoes
  • 2 large garlic cloves
  • 5 TBS & 1 tsp Extra-virgin Olive Oil
  • 1/2 tsp salt
  • 2 lb shrimp (20-25 count)
  • 1 tsp lemon pepper
  • 1 tsp garlic powder
  • 1 tsp flour
  • 1 TBS butter
  • 2 TBS lemon juice
  • 2 TBS white wine
  • 1 lb fettucini, cooked
  • fresh basil

 

  1. Preheat oven to 415ºF.
  2. In a bowl combine:
    • 1 Italian eggplant, quarted
    • 1 zuchinni, quarted
    • 5 roma tomatoes, quartered
    • 2 large garlic cloves
    • 4 TBS extra-virgin olive oil
    • 1/2 tsp salt
  3. Place vegetables in oven-safe pan and cook until browned, 20-30 minutes.
  4. Wash and drain in a colander:
    • 2 lb shrimp (20-25 count) tails removed
  5. Season and mix shrimp with:
    • 1 tsp lemon pepper
    • 1 tsp garlic powder
    • 1 tsp flour
    • salt & pepper to taste
  6. Heat a large pan on medium-high and add:
    • 1 tsp extra-virgin olive oil
  7. Add to the pan:
    • seasoned shrimp
  8. Saute shrimp for 5 minutes and add:
    • 1 TBS butter
    • 2 TBS lemon juice
    • 2TBS cup white wine
  9. Turn off heat when shrimp is mostly cooked (shrimp will have some grey parts).
  10. Add to pan and mix:
    • roasted vegetables
  11. Cover and let shrimp finish cooking until they are all pink.
  12. Toss with sauce:
    • 1 lb fettucini, cooked
  13. Garnish with:
    • fresh basil

You can also pureé the roasted vegetables with a hand blender and then mix in with the shrimp for a creamy sauce. This is a great way to sneak in vegetables to your finicky eaters!
