Roasted Root Vegetables

Roasting vegetables brings out their natural sweetness. This basic recipe is great for potatoes, carrots, parsnips and any firm vegetable.

INGREDIENTS:

  • 2 pounds vegetables (finger potatoes, brussel sprouts, baby carrots, baby squash)
  • 2 TBS extra-virgin olive oil
  • salt and pepper

 

  1. Preheat oven to 400ºF.
  2. In a large bowl combine:
    • 2 pounds vegetables (finger potatoes halved, brussel sprouts, baby carrots, baby squash)
    • 2 TBS extra-virgin olive oil
    • salt and pepper
  3. Put vegetables on a large roasting pan and place in oven.
  4. Roast in the oven, until potatoes are golden and crispy on the outside, tender and cooked through on the inside, about 30 minutes.

When using smaller vegetables, like asparagus and green beans, adjust the cook time. Thick aspargus spears need only 15-20 mins roasting time, and green beans 10 mins. Vegetables are done when they start to brown.
