Sponge Cake

  1. Preheat oven to 350º.
  2. Apply non-stick spray to or butter and flour one 10-inch cake pan.
  3. In a large bowl, using a hand blender or stand mixer mix until pale in color:
    • 1 scant cup sugar
    • 6 large egg yolks
  4. Mix in:
    • 2 tsp vanilla extract
  5. Wash your whisk and in a medium-sized bowl, beat with the hand blender or stand mixer until stiff peaks form:
    • 6 large egg whites
  6. Using a spatula, gently fold the egg whites into the egg yolk mixture, turning it over from the bottom to the top.
  7. Continuing to fold, sprinkle over the mixture:
    • 1 1/8 cups all-purpose flour, sifted
  8. When the flour is incorporated into the batter, pour batter into prepare cake pan.
  9. Bake until cake is golden about 40 minutes, or until a toothpick inserted at the center of the cakes comes out clean.
  10. Remove the cake from the oven and place it on a cooling rack to cool for 15 minutes.
  11. Turn the cake out from the pan and let it cool completely on the rack.
