Pesto isn't just basil and pine nuts. This unbelievable sauce is made with puréed sun-dried tomatoes.

INGREDIENTS:

  • 1 8.5 oz jar sun-dried tomatoes packed in olive oil
  • 1 cup, packed, fresh basil leaves
  • 2 garlic cloves
  • 1/2 cup Parmesan cheese, grated
  • 1/2 tsp salt
  • 1/2 tsp black pepper, ground
  • 12 oz pasta

 

  1. In a food processor blend until finely chopped:
    • 1 8.5 oz jar sun-dried tomatoes packed in olive oil, with the oil
    • 1 cup, packed, fresh basil leaves
    • 2 garlic cloves
  2. Transfer the pesto into a medium-sized bowl and stir in:
    • 1/2 cup Parmesan cheese, grated
    • 1/2 tsp salt
    • 1/2 tsp black pepper, ground
  3. Pesto will last for one week if stored in an airtight container in the refrigerator.
  4. Mix with:
    • 12 oz pasta, cooked
